Once she is born and the child support gets figured out, and I start paying will she then be considered a dependent of mine? Can I add her to my health coverage plan? Will the costs of adding her count towards the child support payments?

This all depends on which state you live in. You might have to provide health and dental insurance. If so, some state won't automatically put you on the birth certificate. You would have to go back to court to put you on. Once this is done then yes, she will then be considered your dependent.
Can I add her to my health coverage plan?
Once you are named the father on the birth certificate then yes, you can add her to your health insurance plan.
Will the costs of adding her count towards the child support payments?
Yes, once child support is calculated, you will get credited for how much it cost you to provide health insurance for your child. It will go down. But only for her care.
